Recipe of the Week: Bacon-Wrapped Drumsticks with Ricotta Herb Stuffing
Ingredients
8 chicken drumsticks
8 slices lean smoked bacon
4 tbsp ricotta cheese
1 finely diced garlic clove
3 tbsp mixed herbs
2 tbsp brown bread crumbs
1 tbsp grain mustard
1 tbsp canola oil
Salt and pepper to taste
Preparation
Mix together ricotta cheese, garlic glove, herbs and bread crumbs. Season with salt and pepper. Gently loosen skin around drumstick and evenly spoon mixture under skin. Wrap bacon tightly around large ends. Place drumstick on baking sheet with seam end of bacon down. Mix together oil and mustard and brush on chicken. Bake for 30 to 40 minutes at 350 F or until cooked through and meat thermometer registers 165 F.
Preparation time: 15 minutes; total time: 55 minutes.
Makes four servings, 326 calories each.
