Recipe of the Week: Cheesesteak Sandwich

Ingredients

  • 1/4 tsp garlic powder, salt and pepper

  • 1 lb. fast-fry beef strip loin grilling steak

  • 1 tbsp canola oil, divided

  • 1 medium white onion, halved lengthwise, thinly sliced

  • 2 cups sliced button mushrooms

  • 1/2 green pepper, thinly sliced

  • 1/2 yellow pepper, thinly sliced

  • 1 whole wheat French baguette

  • 1 clove garlic, halved

  • 1 cup shredded mozzarella cheese

Preparation

Mix garlic powder, salt and pepper in small bowl. Season beef all over with half the garlic powder, salt and pepper mixture. In large, nonstick skillet, heat one tsp canola oil over medium-high heat. Cook beef for two minutes on each side. Remove from skillet. Set aside. Add two tsp canola oil to same skillet and heat over medium-high heat. Add onions and cook for two minutes, stir in mushrooms, bell peppers and remaining garlic powder, salt and pepper mixture, and cook for another minute, stirring often.

Position oven rack in top third of oven. Preheat oven’s broiler. Cut baguette into four equal-sized pieces. Slice horizontally and place on foil-lined baking sheet, open sides facing up. Rub each baguette with cut garlic. Place baking sheet in oven under broiler to toast bread, about one minute. Remove from oven. Set the four baguette “tops” to side for after broiling. Layer remaining four baguette slices on baking sheet evenly with steak (slice steak into smaller strips, if needed), mushroom mixture and mozzarella cheese. Broil for another minute or until cheese is melted. Remove from oven and top with baguette tops. Enjoy right away!

Preparation time: 15 minutes; total time: 25 minutes.

Makes four servings, 570 calories each.
